dry-aged for a minimum of 21 days, has a wonderful marbling, a smooth
texture and a rich mouth-watering flavour.  For those who want a lean tender roasting joint this is the one. Delicous hot or cold  for medium cook for 44 minutes per kilo and most IMPORTANT let the joint rest upto 40 minutes before carving what a difference this makes to the eating quality
